great pediatrics book

I thought this was one of the most complete pediatrics books out there. I had my pediatrics rotation before internal medicine, so I wanted a book that had complete information, especially about critical care management, etc. I used Blueprints and Case Files and thought this NMS book was the most helpful for the shelf. I used the new 2009 version.

Killed the Peds shelf with this book!

The book is very indepth and takes time to read BUT I made a 99% on the Peds shelf exam using this book +case files. I did this for General surgery as well and made the same score

best Peds review book

This covered minutae without perseverating on one topic for too long. There were little facts that I read that came up on exam questions or on wards that only I knew because others were reading First Aid. I was able to read through whatever chapters were being covered each week on the Peds clerkship without it being overwhelming and I made it through the entire book. I read the parts I highlighted a couple days before Step 2 and I was set.

About the Author

Richard Light is Professor and Head of School: Sport and Physical Education, in the College of Education at the University of Canterbury, New Zealand. He played and coached rugby in Australia and Japan and has conducted research on coaching and learning in sport across a range of sports and cultures

John R. Evans is Associate Professor in the Faculty of Education and Social Work at the University of Sydney. He has extensive experience as a rugby player and coach in Australia, Japan and France and is the first Indigenous Australian to be awarded a PhD in the Faculty of Education and Social Work at the University of Sydney

Stephen Harvey is an Associate Professor in Instructional Methods and a member of Physical Activity and Sport Sciences at West Virginia University, USA. Stephen has an extensive background in field hockey as player and coach and, before moving to the USA from the UK, was a National Governing Body coach educator and active field hockey coach, coaching with the England U16 Boys

Rémy Hassanin is completing a PhD at Federation University Australia under the supervision of Richard Light. Rémy is a French citizen who played and coached rugby in South Africa and France

Preface

The modern hospitality industry demands more of its chefs than ever before. Competitive markets and diverse workplaces have forced chefs to balance culinary artistry with business management and human relations skills. The role of chef has evolved. It is time that the education of young culinarians reflects the changes in the industry, and that working chefs are given the opportunity to learn management and human relations skills from those who have both industry experience and classroom knowledge.

The Chef Manager examines the role of the chef as kitchen manager, team coach, and culinary innovator. While a complicated study, The Chef Manager reflects practical experience and real life situations. Modern theories of management and human relations skills are explored in detail and given a hospitality twist that can be easily digested by culinary students and working chefs. Students can then practice their new knowledge in their workplaces and witness firsthand the transition of their kitchens and dining rooms from food factories to efficient, quality-inspired operations.

The Chef Manager also explores the concepts of Total Quality Management (TQM), a theory of management that helped revolutionize the industries of post-World War II Japan and made Japan a leader in the world's economy. TQM strategies now influence many American industries as they, too, try to improve efficiency and increase productivity with an emphasis on quality. A management theory founded by Edward Deming, with contributions from Philip Crosby and Joseph Juran, TQM promotes quality improvements through continual assessments of the efficiency of production and service processes.

For the hospitality industry, TQM reaffirms the customer's role as the ultimate inspector of quality in product, service, and value. TQM asks for input from all levels of employees and prescribes a teamwork approach to quality improvement. Excellent! Long overdue. Culinary Art Schools are rolling out baby chefs in record numbers and although they may have the culinary knowledge, only time and experience will give them the managerment skill needed to operate a first rate, organized, efficient and effective restaurant. Management is tough in any field, but particularly so in the restaurant business and I hope Chef/Owner Managers will read and apply the management practices discussed in this book. Chef Mangers who did not have the opportunity to get formal culinary training may also find this book useful. The information on Total Quality Management could and perhaps should have been a separate book. Simply written, The Chef Manager deserves two thumbs up.

The Chef Manager is a must have book for anyone in culinary school. We learn so much about techniques and other aspects of business that we are never taught where this career field came from. As Chefs we should know not only techniques, but also our history and how standards came to be. Not only is this that perfect book that answers all those questions you never knew went unanswered, but the author is a wonderfully knowledgeable instructor. I personally have had the good fortune of being taught by him for the past three years. He is one of the most knowledgeable chefs in the field and continues learning and sharing knowledge with his students every semester.

Children of the Wild West follows the daily lives of children on the trails of the old west. From migrating to building, this book covers everything you might want to know about children in the west.

In this book several stories are created to give a feel for what it was like to live as a child during the times when the West was still "Wild". These stories, sometimes, makes you feel like you're right there on the dusty trail hunting down a pack of escaped cattle. It also gives you the chance to judge the right and wrongs of these times on your own.

It was interesting that the book also covered Native Americans in the West. It was enthralling to read about the boarding schools which Native Americans had to go to, and the harsh treatment in which they were forced to endure. This gives the book a more well rounded feel and makes it much more interesting.

Overall Children of the Wild West is a very good book about the lives of growing children in the West. I would recommend this book for anyone looking for a light read on the subject.

How Immigrant & Indian Children Lived (Starting ~ 1841)

Russell Freedman did an exceptional job with this book; it zeroes in on the immigrant children’s’ experience of going West as well as the indigenous Indian children’s lives before, during and after interaction with the white settlers.

The photos selected were exceptional and eye-opening. My favorite aspect of the photos selected centered on the variety of tribal children photographed. I don’t think I will ever forget the two sets of photos of Indian children as they entered Indian Training Schools (schools that taught Indians how to become white) and how they had changed 14 or 15 months later. There was no spark of joy or happiness in any of these ‘chosen’ children.

Most books talk about the life in the US and the Territories from an adult’s perspective. This volume focuses on life amongst the younger population; it is wonderful.

Historical fiction is boring. Right? That’s the common wisdom on the matter, certainly. Take two characters (interesting), give them a problem (interesting), and set them in the past (BOOOOOORING!). And to be fair, there are a LOT of dull-as-dishwater works of historical fiction out there. Books where a kid has to wade through knee-deep descriptions, dates, facts, and superfluous details. But there is pushback against this kind of thinking. Laurie Halse Anderson, for example, likes to call her books (“Chains”, “Forge”, “Ashes”, etc.) “historical thrillers”. People are setting their books in unique historical time periods. And finally (and perhaps most importantly) we’re seeing a lot more works of historical fiction that are truly fun to read. Books like “The War That Saved My Life” by Kimberly Brubaker Bradley, or "One Crazy Summer" by Rita Williams-Garcia, or “My Near-Death Adventures” by Alison DeCamp, or ALL of Louise Erdrich’s titles for kids. Better add “Cloud and Wallfish” by Anne Nesbet to that list as well. Doing what I can only characterize as the impossible, Nesbet somehow manages to bring East Germany in 1989 to full-blown, fascinating life. Maybe you wouldn't want to live there, but it's certainly worth a trip.

The year is 1989 and as Noah (now Jonah)’s father would say, there’s a definite smell of history in the air. His mother has moved the family to this new city as part of her research into education and stuttering (an impediment that Noah shares) for six months. But finding himself unable to attend school in a world so unlike the one he just left, the boy is lonely. That’s why he’s so grateful when the girl below his apartment, Claudia, befriends him. But there are secrets surrounding these new friends. How did Claudia’s parents recently die? Why are Noah’s parents being so mysterious? And what is going on in Germany? With an Iron Curtain shuddering on its foundations, Noah’s not just going to smell that history in the air. He’s going to live it, and he’s going to get a friend out of the bargain as well.

It was a bit of a risk on Nesbet’s part to begin the book by introducing us to Noah’s parents right off the bat as weirdly suspicious people. It may take Noah half a book to create a mental file on his mom, but those of us not related to the woman are starting our own much sooner. Say, from the minute we meet her. It was very interesting to watch his parents upend their son’s world and then win back his trust by dint of their location as well as their charm and evident love. It almost reads like a dare from one author to another. “I bet you can’t make a reader deeply distrust a character’s parents right from the start, then make you trust them again, then leave them sort of lost in a moral sea of gray, but still likable!” Challenge accepted!

Spoiler Alert on This Paragraph (feel free to skip it if you like surprises): Noah’s mom is probably the most interesting parent you’ll encounter in a children’s book in a long time. By the time the book is over you know several things. 1. She definitely loves Noah. 2. She’s also using his disability to further her undercover activities, just as he fears. 3. She incredibly frightening. The kind of person you wouldn’t want to cross. She and her husband are utterly charming but you get the distinct feeling that Noah’s preternatural ability to put the puzzle pieces of his life together is as much nature as it is nurture. Coming to the end of the book you see that Noah has sent Claudia postcards over the years from places all over the world. Never Virginia. One could read that a lot of different ways but I read it as his mother dragging him along with her from country to country. There may never be a “home” for Noah now. But she loves him, right? I foresee a lot of really interesting bookclub discussions about the ending of this book, to say nothing about how we should view his parents.

As I mentioned before, historical fiction that’s actually interesting can be difficult to create. And since 1989 is clear-cut historical fiction (this is the second time a character from the past shared my birth year in a children's book . . . *shudder*) Nesbet utilizes several expository techniques to keep young readers (and, let’s face it, a lot of adult readers) updated on what precisely is going on. From page ten onward a series of “Secret Files” boxes will pop up within the text to give readers the low-down. These are written in a catchy, engaging style directly to the reader, suggesting that they are from the point of view of an omniscient narrator who knows the past, the future, and the innermost thoughts of the characters. So in addition to the story, which wraps you in lies and half-truths right from the start to get you interested, you have these little boxes of explanation, giving you information the characters often do not have. Some of these Secret Files are more interesting than others, but as with the Moby Dick portions in Louis Sachar’s “The Cardturner”, readers can choose to skip them if they so desire. They should be wary, though. A lot of pertinent information is sequestered in these little boxes. I wouldn’t cut out one of them for all the wide wide world.

Another way Nesbet keeps everything interesting is with her attention to detail. The author that knows the minutia of their fictional world is an author who can convince readers that it exists. Nesbet does this by including lots of tiny details few Americans have ever known. The pirated version of “The Wonderful Wizard of Oz” that was disseminated for years throughout the German Democratic Republic? I had no idea. The listing of television programs available there? Very funny. Even the food you could get in the grocery store and the smell of the coal-choked air feels authentic.

Of course, you can load your book down with cute boxes and details all day and still lose a reader if they don't relate to the characters. Noah could easily be reduced to one of those blank slate narrators who go through a book without a clear cut personality. I'm happy to report that this isn't the case here. And I appreciated the Claudia was never a straight victim or one of those characters that appears impervious to the pain in her life. Similarly, Noah is a stutterer but the book never throws the two-dimensional bully in his path. His challenges are all very strange and unique to his location. I was also impressed by how Nesbet dealt with Claudia’s German (she makes up words or comes up with some Noah has never heard of and so Nesbet has the unenviable job of making that clear on the page). By the same token, Noah has a severe stutter, but having read the whole book I’m pretty sure Nesbet only spells the stutter out on the page once. For every other time we’re told about it after the fact or as it is happening.

I’ve said all this without, somehow, mentioning how lovely Nesbet’s writing is. The degree to which she’s willing to go deep into her material, plucking out the elements that will resonate the most with her young readers, is masterful. Consider a section that explains what it feels like to play the role of yourself in your own life. “This is true even for people who aren’t crossing borders or dealing with police. Many people in middle school, for instance, are pretending to be who they actually are. A lot of bad acting is involved.” Descriptions are delicious as well. When Claudia comes over for dinner after hearing about the death of her parents Nesbet writes, “Underneath the bristles, Noah could tell, lurked a squishy heap of misery.”

There’s little room for nuance in Nesbet’s Berlin, that’s for sure. The East Berliners we meet are either frightened, in charge, or actively rebelling. In her Author’s Note Nesbet writes about her time in the German Democratic Republic in early 1989, noting where a lot of the details of the book came from. She also mentions the wonderful friends she had there at that time. Noah, by the very plot in which he finds himself, would not be able to meet these wonderful people. As such, he has a black-and-white view of life in East Berlin. And it’s interesting to note that when his classmates talk up the wonders of their society, he never wonders if anything they tell him is true. Is everyone employed? At what price? There is good and bad and if there is nuance it is mostly found in the characters like Noah’s mother. Nesbet herself leaves readers with some very wise words in her Author’s Note when she says to child readers, “Truth and fiction are tangled together in everything human beings do and in every story they tell. Whenever a book claims to be telling the truth, it is wise (as Noah’s mother says at one point) to keep asking questions.” I would have liked a little more gray in the story, but I can hardly think of a better lesson to impart to children in our current day and age.

In many way, the book this reminded me of the most was Katherine Paterson’s “Bridge to Terabithia”. Think about it. A boy desperate for a friend meets an out-of-the-box kind of girl. They invent a fantasyland together that’s across a distinct border (in this book Claudia imagines it’s just beyond the Wall). Paterson’s book was a meditation on friendship, just like Nesbet’s. Yet there is so much more going on here. There are serious thoughts about surveillance (something kids have to think about a lot more today), fear, revolution, loyalty, and more than all this, what you have to do to keep yourself sane in a world where things are going mad. “Alice Through the Looking Glass" is referenced repeatedly, and not by accident. Noah has found himself in a world where the rules he grew up with have changed. As a result he must cling to what he knows to be true. Fortunately, he has a smart author to help him along the way. Anne Nesbet always calls Noah by his own name, even when her characters don’t. He is always Noah to us and to himself. That he finds himself in one of the most interesting and readable historical novels written for kids is no small thing. Nesbet outdoes herself. Kids are the beneficiaries.

Utterly brilliant!

This book is utterly BRILLIANT. It's exhilaratingly smart and fun, a wild ride from the very beginning, when 11-year-old Noah is picked up from school in Virginia by his parents only to be told his name isn't really Noah, he isn't really 11 after all, and they're heading to East Berlin (this is set in 1989, when the Wall was still up) IMMEDIATELY, using an all-new set of names and a made-up history he urgently has to memorize....oh, and that from now on, he can't ask any questions, because SOMEONE will always be listening from the moment they arrive in East Berlin!

It's a fascinating and enormously fun story full of secrets and codes and mysteries, the setting is incredibly rich...and oh, the emotional developments as Noah makes a true friend in one of his neighbors and is drawn into her own painful and mysterious story!

This was an utterly compulsive read from beginning to end, I enjoyed every moment of it, and the ending made me cry in a very, very good way.

I LOVED this book. The first thing I did when I finished reading was open up the Cybils nomination page, because I wanted to nominate it for the best MG (non-speculative-)fiction book of the year. But of course someone else had already nominated it! It really does deserve to win all of the awards.

I haven't been so blown away by any book I've read for a very, very long time.

About the Author
ELIAS CAIRO is a co-owner and the lead salumist at Portland, Oregon’s, Olympia Provisions, which he founded in 2009. Born in Salt Lake City to a Greek family who butchered lamb and goats utilizing Old World preparations and technique, Cairo started cooking at a young age in his father’s restaurants. He began a European apprenticeship in Switzerland at the age of twenty, where he learned classic butchery and charcuterie from renowned chef Annegret Schlumpf before moving to Portland to open Olympia Provisions. 

MEREDITH ERICKSON has written for the New York Times, Elle, the National Post, Monocle, and Lucky Peach. She has also worked as an editor and production manager for various magazines, campaigns, and television programs, and was the editor of The Family Meal by Ferran Adria. She is co-author with David McMillan and Frédéric Morin of the James Beard–nominated book The Art of Living According to Joe Beef, as well as Le Pigeon with Gabriel Rucker. She lives in London.

Charcuterie Tools and Equipment

You don’t need a lot of fancy equipment and supplies to make charcuterie, but there are a few items, some essential, that will probably be unfamiliar to you. In most cases, these specialized tools will make your charcuterie making easier and ensure that your final product is safe and delicious. Any and all charcuterie materials—thermometers, casings, grinders, stuffers, smokers, smoking accessories, nets, seasoning, spices, scales—can be found at SausageMaker.com. 
digital scale

You will need a digital scale that is accurate up to .5 gram. It’s also ideal if the scale can work in both grams and ounces, and if you can zero it out after placing a bowl or other vessel on the scale.
dry box

To make fermented meats you will need a room or chamber that maintains 58°F (14°C) and 83 percent relative humidity, with a very slow airflow. More on this on page 118–19.

be held at 73°F (23°C) and 95 percent relative humidity, with very little or no airflow. More on this on page 132.

grinder
There is something really rewarding about making a simple sausage
or pâté using a hand-grinder. But if I have a good amount of product
to make or am trying to make an emulsification, I like the ease of using an electric grinder. A KitchenAid mixer with a grinder attachment is a good starting place. It can handle a decent amount of meat. However, if you plan on making most of the recipes in this book, any one-horsepower grinder with a steel grinder head is the way to go. 

knives
You can do most of the tasks required in the charcuterie chapters of this book with two knives: a deboning knife and a sausage-making knife.
The Victorinox 6-inch (15-cm) deboning knife has a nice point
on the tip and not too much flex. It will help you easily get the meat off the bones and is great for removing sinew and unwanted fat. 

A sausage-making knife isn’t absolutely necessary, but it will make your life a bit easier. It looks like a small paring knife but has thin needlelike points on the opposite edge of the blade. You use this end to puncture your casing if you get any air in it during sausage making. 
pâté molds and slow-cooking vessels
I love a solid, good-looking pan with a tight-fitting lid for making
pâtés and slow-cooking meats. Le Creuset is my go-to brand; they aren’t cheap and they make you look fancy, but they are also just
damn fine cooking vessels.
pH meter
A pH meter measures the pH level of your product and provides the only way to know for sure whether or not you are making a safe fermented product. If you are making fermented meats, such as salami, this is a small investment to make for serious peace of mind. I use one from Hanna Instruments that is easy to calibrate and simple to read. 
smoker
You can smoke most of the meats in this book using a Weber grill or any charcoal grill with a lid. But if you plan on smoking more than once or twice a year, buy an electric smoker with a heating pad that will burn your chips without you having to stoke the coals. My smoker of choice is the Little Chief. 
stuffer
Although it’s possible to stuff sausages using a grinder, I personally don’t like to; it takes a bit of time to get the feel for it. For these
recipes, I would use a stand-up piston stuffer with a hand crank and
a capacity of up to 31⁄2 pounds (1.6 kg) of meat. Far and away the
best stuffer of this size is made by a German company called Dick. 

thermometer
Buy one that you can calibrate easily. At home, I use a standard
thermometer with an adjustable dial. I calibrate it by making an ice
and water slurry, then setting the proper temperature as necessary.
To calibrate your thermometer, in a large pot, mix ice and water in equal parts, then place the thermometer into the ice slurry; it should read 32°F (0°C). If it doesn’t, adjust your thermometer until it displays the correct temperature when stuck in the ice bath. 

water activity meter
This piece of equipment will let you know you are making a safe dry-cured or fermented product. A water activity meter measures the unbound water content of your product, and the more unbound water you remove from a dry-cured or fermented sausage, the better your chances of reducing spoilage. The industry standard is the Pawkit made by Decagon. This amazing meter will last for a lifetime of meat making. It is only used for dry-cured items.

The Perfect Start to a Charcuterie Obsession

As a foodie, I love to stretch my culinary skills in directions where I've never traveled. I saw this book,read a few preview pages, and bought it. The first half describes how to make nearly every cured meat known to man. Starting with pate, the charcuterie journey travels through sausage, bratwurst, bacon, frankfurters and finally cured hard salamis. The second part of the book takes the meat made in the prior part and creates wonderful dishes that are served at the OP restaurant in Oregon.

Each of the recipes have been reduced to home-sized projects, where 3 pounds of raw meat are transformed in to a dozen brats or two dozen frankfurters. And the recipes are absolutely delicious! If you're over 45 years old, the franks will take you back to the ones sold in butcher shops, still connected to each other by the natural casings in which they are stuffed. The brat recipe is by far the best I've ever eaten (and I am German and have been raised on Oktoberfests). The homemade bacon will make you abandon the horrible renditions currently being offered in grocery stores around the country.

If you've ever had the desire to try to cure your own meats at home, this is a wonderful cookbook to take the charcuterie amateur to the journeyman's level. Make some sausage for your friends and watch the expression on their faces when they bite in to the best bratwurst they have ever eaten.

Great book with beautiful photography. I bought the book before my trip to Portland so I could get pumped about my visit and let me tell you, the place did not disappoint! Truly one of the highlights of my trip. Can't wait to return! Oh yeah, buy the book. :)

About the Author
Will Jordan initially wanted to be an actor and while working as an extra, he was cast as a World War II soldier in a feature film. After being put through military bootcamp and taught how to handle weapons for his role, he decided to do further research and soon fell in love with works of military history. He then turned his hand to writing and, in order to shape his first thriller, visited weapon ranges all over America and eastern Europe, becoming something of an arms expert.

A great military thriller...

Sacrifice sees the return to action of Ryan Drake- our tough guy hero with the soft centre- in another fast-paced adventure to satisfy any fan of the military or conspiracy thriller. Opening with the spectacular shooting down of a helicopter in war torn Afghanistan, ferrying a particularly important American operative, Drake and his team are despatched to deal with the aftermath and to track down the missing agent kidnapped from the crash site. It soon becomes clear to Drake and his team that shady forces are at work and that this mission is nowhere near as straightforward as it seems, leading to some pretty impressive altercations and an adrenaline fuelled race for the truth...

Once again, Jordan thrusts the reader straight into the harsh terrain and bleak surroundings of an active war-zone, perfectly capturing the heat and starkness of Afghanistan. As in Redemption, Jordan never allows the reader to lose sight of the location and atmosphere which underpins the action throughout. Likewise, the same level of detail regarding the actions of the Army and Black-Ops outfits is absolutely perfect, and Jordan's inherent knowledge of military hardware pepper the story educating the reader but without becoming too know-it-all, while other writers in this genre find this a difficult balance to achieve. As regards plotting, the story unfolds at a pace and I liked the setting up of Drake against a former nemesis and also the reappearance of a rather striking character from the first book that unsettles our hero. Although the plot plays out in a rather similar way to the first book, this didn't overly concern me as having read many McNabs and Ryans, there is a distinct similarity generally in this genre, but Jordan has an added weapon in his arsenal...

I think what sets Jordan apart from his military thriller counterparts, is that not only does he have a charismatic but utterly focused professional soldier as his central character, who is appealing to both genders, but that once again there is a brilliant balance with female characters who pack a punch, but do not become overly stereotyped. There are three such characters in this book, who not only provide a good foil to their macho counterparts, but are well drawn enough that their characters are balanced between their professional or rogue roles, while still retaining their essential sense of femininity alongside their kick-ass doggedness. In my wide reading of this genre, I have not encountered a male author yet with such convincing female characters who does not resort to stereotypes, so thumbs up for Jordan on that one!

Another assured book in this compelling series then, with thrills, spills and skulduggery at the highest levels of the US security departments. Packed with high-octane action scenes and perfectly placed militaristic detail there is much to entertain any reader of this genre. Only question is- what will Ryan Drake become embroiled in next?

Great book with lots of action.

This book was great. The author has a lot going for him. His first book in the series, Redemption, was good but this is even better. What makes this author good is his ability to describe things in such a way that you can actually picture that location. In this book his description of Afghanistan really made you feel like you could see through his eyes. He is also great at describing action and battle scenes. I have read a lot of action thrillers but his descriptions are some of the best I have run across. He is also not afraid of losing characters, and in doing so, you feel emotional about the loss. This guy really knows how to write and I appreciate is style.

I loved this dries. I actually started with the 3rd book not knowing this was a series. I then went back and read 1 and 2. All 3 were great! They are riveting, suspenseful and you just don't want to put them down. I really felt like I was right there living the action with them. I would hight recommend all 3 of the Ryan Drake series.
